Our Winery of the Month for May is Corollary Wines, whose singular mission is to explore the terroir of Oregon’s Willamette Valley and its expression in sparkling wine.
Corollary will be pouring samples during Local’s Night on the 2nd, which will pair perfectly with the menu we’re serving for the occasion.

“Jeanne and Dan founded Corollary Wines with a singular mission: to explore the terroir of Oregon’s Willamette Valley and its expression in sparkling wine.
But their path to winemaking wasn’t exactly a straight line. They started learning about sparkling wine the traditional way—by drinking a lot of it. (#truth.) Then they began doing more structured tastings. Eventually they found ourselves planning trips to visit their favorite Champagne grower-producers. They read a lot of books. After a few more years, on a whim, they tried making some traditional-method sparkling cider in their garage. And it turned out great!
That’s when they started getting serious about bubbles. Through spending time in Oregon’s Willamette Valley, near Jeanne’s hometown of Beaverton, they realized that Oregon has the perfect geography and climate to produce amazing sparkling wines.”
